Dietary endeavors *Giggle*

I am starting to have one or two dinners a week meatless. This is strictly for me. I’d have The Curmudgeon do it too but he refuses to. “No meat? No way!”
I can’t force him to change his diet. I have asked him to, but he won’t do it. I can’t even get him to cut back on his use of salt. Even with proof that less salt is better for him with his MS. At least he’s not fighting me so much on more fish and chicken and less red meats.
I am looking forward to four days of no cooking and no doing dishes. I’ve even been sneaking peaks at the menus of the three restaurants in the hotel. I will be indulging myself shamelessly.
More rain around here is making it impossible to get a few things finished before I leave. I guess the chores can wait until I get home.
If it will stop raining long enough I might get to enjoy my lilacs before they are gone.

Sick of cooking?

I have days where I am so beyond tired of cooking that nothing sounds good. I dig through cookbook after cookbook to find something that appeals to me. Those are the days I usually order a pizza, Chinese food, or just wing it with an easy to fix and clean up afterwards meal.
One of my favorite fall back meals is beef and bean burritos. The Curmudgeon loves them, I can serve them on paper plates, and have very little clean up afterwards.
What do you do when you’re sick of cooking?
Do you have any recipes that you tend to fall back on?

I only ask because…

“What do you want for dinner?” This is a question asked when one is at the end of one’s rope and out of ideas.
“I dunno.” Is the typical answer received.
When I get that answer I begin to cook whatever comes to hand. Some concoctions are almost inedible while some aren’t bad. A few have become favorites.
“Ew, what are you cooking?”
“I dunno. Dinner?”
“What’s in it?”
“You don’t care, remember?”
“Oh.” Long pause. “We could have ordered pizza.”
“Too late now, you’re eating what I’m making.”

Pumpkin Whoopie Pies with Cream Cheese Filling

Yesterday G brought over samples. I’d given her a recipe I saw on Facebook and she tried it out. Can you say delicious? They are so yummy!!! They are a delightful taste sensation!
The Curmudgeon tried to eat one late last night and had two drooling dogs to contend with. They sure did want to share with him.
Pumpkin Whoopie Pies with Cream Cheese Filling
Makes 12-14
3 cups All Purpose Flour
1 Tablespoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground ginger
½ teaspoon salt
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
1 cup brown sugar
1 cup sugar
1 cup vegetable oil
1 – 15 oz. can of pumpkin
2 large eggs
1 teaspoon vanilla extract
Preheat oven to 350 degrees.
Beat together brown sugar, sugar, oil and pumpkin. Add eggs one at time, mixing well after each addition, followed by the vanilla. In a separate bowl, sift together the dry ingredients. Slowly incorporate the dry ingredients into the wet until just combined.
Using a pastry bag with a round tip, or a big zip top plastic bag with one corner snipped, squeeze out concentric circles of batter, starting from the middle and working outward until the circles are about 2 inches in diameter. Bake for 11 minutes and cool on a rack.
Cream Cheese Filling
1 – 8 oz. package of cream cheese, softened
1 stick of unsalted butter, room temperature
1 – 16 oz. package of powdered sugar
about a cap full of vanilla extract
a pinch of cinnamon (to taste)
Beat together cream cheese and butter. Add powdered sugar, vanilla and cinnamon. Frost flat side of half the pies and top with another piece.
Enjoy right away or chill overnight.

The harvest from the potted garden so far…

So far we’ve enjoyed several fresh tomatoes, even gave G a couple. We’ve had two nice eggplants. One we had a week or two ago and one we enjoyed for our dinner last night. We might get two or three more from the plants if the weather holds up.
We did not get more than two lousy looking peppers, the early and long heat destroyed the plants. I replanted the one pot with romaine lettuce and that is looking rather nice so far.
I planted two pots, that are small enough to bring inside, with rosemary. First sign of frost in they come! We’ve enjoyed the pots of fresh rosemary, chives, and basil all summer.

It’s fair week here.

Starting today the Great Allentown Fair opens and will continue for an entire week. As a teenager, I loved to go to the fair with my boyfriend, now known as The Curmudgeon. He can no longer go since it takes walking.
The last several years I haven’t gone. However, this year G and I are going to go. We’re both hungry for some funnel cake and other goodies that you can only get at the fair.
I’ll bring The Curmudgeon a doggie bag.

I am so bored with cooking dinners! I can stand in front of the freezer or fridge staring at the contents forever and my mind goes blank on what to make.
It’s not that I lack ingredients, my freezer and cupboards are loaded with food. I guess what I lack is inspiration, energy, interest, and ideas. I’m sure I am not the only one who feels this way.
I could eat a sandwich every night for dinner and it wouldn’t phase me a bit. However, The Curmudgeon is not that fond of them. I enjoy going out to dinner, but he doesn’t, he hates going anywhere these days.
I could order in, but then I still have to do the dishes…

Updates for the week

The packages I expected finally arrived. Color me happy. Hurray! The sushi plate sets arrived in time for me to surprise G with a special luncheon.
G and I went to the farmers market. Then we went to Wegman’s where I bought us a special treat for our lunch, we had a lovely sushi lunch on my new plates. I think we both earned it.
Found out The Curmudgeon forgot to take his morning pills yesterday , completely explaining why he had such a bad day. Unfortunately, I have enough difficulty remembering to take my own medications, having to make sure he takes his is a stretch.

I love Thursdays at the farmers market

We had rain off and on yesterday. Unfortunately we also had heat and humidity come back. Dang, I so enjoyed the normal low humidity and cooler days we had this last week. I look forward to their return.
This heat and humidity did not go over well with The Curmudgeon, he had to turn the AC back on. There went my allergies off the deep end again since somewhere in the one AC there is a crop of mold.
At least there were breaks between rain showers where G and I could get out of the car and dash for the store and later the farmers market. I absolutely need to remember to take a camera along one of these days so I can post farmers market pictures. We have a fabulous farmers market here.
As you walk inside, the fragrances of fresh, baked goods, smoked meats, pizzas, roasted peanuts, and fresh fruits caress you and tempt you from one stand to the next. They dance before you and tease you to ask for a sample of this and that. Once you’ve tasted you must buy….
I brought home many lovely treats to have with our dinners this week. Things like loaded baked potato salad, broccoli salad, and the smoked chicken Waldorf salad that we had for our dinner last night.
