We’re having it for dinner again?

If The Curmudgeon wouldn’t shoot me I’d have lasagna for dinner again tonight.  We had it last night and it tasted even better than the lasagna we had the night before.

It’s not just how good it tastes, it’s how easy it is for me to heat and what few dishes I have to do afterwards.  Yep, I am lazy.

Anyone who wants cupcakes had better get over here.  I have a dozen left and they are tasty.  I do NOT need to eat a dozen cupcakes!

You all have a good one!

It’s Trick or Treat nite here!

Decorations up?  Almost done.  Vampire teeth, skulls, and bones ice cubes made?  Check.  Candy?  Check.  Lasagna ready?  Check.  Fancy Halloween cupcakes ready to go?  Check.  Wine and drinks ready?  Check.

Well then, LET’S PARTY!!!!

I ordered these cookie cutters

     I couldn’t resist them.

Brrrr, it’s chilly.

Wow, finally had to turn the heat on.  It got danged cold and damp in here.  Turned out to be a perfect night to make chicken fried steak, red-eye gravy, mashed potatoes, and beans for dinner.  The Curmudgeon was a very happy camper.

The dogs are loving the cool weather.  Gavin is a total idiot these days, he’s hucklebutting all the time.  Patty , well she’s her normal reserved and quiet self.  I really love it when she gets silly, forgets herself, and hucklebutts.  That’s when you see her fun side that she tries to hide.

The cooler weather also helps The Curmudgeon feel somewhat better.  I’m hoping it means we’ll have more good days now for a while.

As for me, well I’m not very fond of cold weather and that’s what will soon follow this so I’m not thrilled.

You all have a good one and stay warm enough.

Another fall recipe

It’s that time of year when gardeners will soon have to harvest what is left of the tomatoes on their vines.  Yes, do harvest those green ones and give this a try.

Green Tomato Chutney

  • 2 1/2 pounds firm green tomatoes, about 6 cups diced
  • 1 cup golden raisins
  • 1 cup chopped onion
  • 1 1/2 cups light brown sugar, firmly packed
  • 1 teaspoon salt
  • 1 1/4 cups cider vinegar
  • 1 tablespoon mixed pickling spices
  • 1 teaspoon chili powder
  • 1 tablespoon chopped crystallized ginger

Preparation:

Trim the stem and blossom ends from tomatoes and cut into 3/4-inch dice (you should have about 6 cups). Combine all ingredients in a heavy kettle; bring to a boil. Reduce the heat and cook for about 1 hour, until thickened.
Spoon chutney into hot sterilized jars, leaving 1/4-inch head space; wipe jar rims. Cover at once with metal lids, and screw on bands. Process for 15 minutes in a boiling-water canner, or 20 minutes for altitudes of 1001 to 6,000 feet. Over 6,000 feet, process for 25 minutes.

Makes about 3 pints of green tomato chutney.

Lovely Saturday

What a nice Saturday.  Our hoodies arrived and they are perfect! First thing I did was pop them in the wash so we could wear them almost immediately.  Glad I did too because they are comfy and perfect for now with the temperature dropping down into the upper forties.

I finally managed to bake that gingerbread I was going to bake earlier this week.  The house smelled wonderful and the gingerbread turned out quite nice.  It hit the spot for both of us and for G and her husband.  I took some over to them and managed to get there before they had their dinner so my timing couldn’t have been better.

The gingerbread was a perfect ending to a dinner of scalloped potatoes, grilled lemon herb chicken, and fried green tomatoes.  The Curmudgeon?  Let’s say happy and sleepy described his evening.

You all have a good one!

Fall is here, what do you start to crave at this time of year?

This is the time of year when I begin to crave things like green tomato pie, pumpkin pie, and gingerbread.  I dug out my gingerbread recipe to make some later today.

Gingerbread

1/2 cup white sugar

1/2 cup butter

1 egg

1 cup molasses

2 1/2 cups all-purpose flour

1 1/2 teaspoons baking soda

1 teaspoon ground cinnamon

1 teaspoon ground ginger

1/2 teaspoon ground cloves

1/4 teaspoon allspice

1/2 teaspoon salt

1 cup hot water

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch square pan.
  2. In a large bowl, cream together the sugar and butter. Beat in the egg, and mix in the molasses.
  3. In a bowl, sift together the flour, baking soda, salt, cinnamon, ginger, and cloves. Blend into the creamed mixture. Stir in the hot water. Pour into the prepared pan.
  4. Bake 1 hour in the preheated oven, until a knife inserted in the center comes out clean. Allow to cool in pan before serving.

Slow cookery–tasty!

I love food cooked in my crock pot and wonder why I don’t do use it more often.  We had a lovely, tender and flavorful beef roast with all the trimmings last night. The Curmudgeon was one very happy camper.

Last time I used the crock pot I made some pretty lousy apple crisp oatmeal.  I won’t be making that again.  It was the first thing I ever made in a crock pot that actually turned out bad.

What I love about my Kindle is that I have downloaded a bunch of free cook books and that included several crock pot cook books.  Once the cool weather settles in here, I do believe the crock pot will get a good workout.

Do you have any favorite crock pot recipes?

You all have a good one!

What happened at the doctor…

The Curmudgeon’s neurologist appointment resulted in him getting a prescription for a rollator, and a scolding for not using one that day.  His walking was lousy.

After we left there I stopped at the Red Robin for a late lunch.  I needed to take my pills and I needed to eat with them.  The Curmudgeon had their Bleu Ribbon burger.  I had Riblets and Clucks.  Our very late lunch went on to be our early dinner.  Later on neither one of us was interested in anything more than a light snack.

No G, we didn’t get the apple pie bites with caramel sauce.  By the way folks, if you haven’t tried them, they are to die for–G and I have had them and love them.

Getting geared up for our Halloween party…

Yes, I know it’s early but yesterday G and I decided what to make for Dominique’s birthday cake  at our Trick or Treat night party.  Then, we had to make sure we had the supplies on hand since last time many of the Halloween cake decorating items were out of stock when we went looking for them.

I went on Amazon and ordered everything we need to make….. MINIONS!!!!

You all have a good one!

But Momma, I want dat lamb gravy!

I’ve become a lazy baker and cook.

Hehehe!  I baked oatmeal cookies tonight and kept tripping over two dogs who thought whatever Mom was making smelled wonderful.  I don’t spend time mixing batter and fussing anymore.  I get most of my meats and some other items through a lovely company called Five Star Home Foods  http://www.fivestarhomefoods.com.  They have several different cookie doughs.  😀

I love their cookie dough because I can bake exactly what I want, usually 4 cookies, two for me two for The Curmudgeon.  We get fresh from the oven cookies.  I don’t have to dirty a mixing bowl and their cookies are good.

Yes, after years of being an excellent baker and cook, I have gone the lazy route.

You all have a good one!
