Let the grilling and gardening begin.

The grill is clean! I am happily grilling our dinners again. Next would be to get the hammock stand set up. Yes, I am running very late this year. LOL!
What can I say, we had so much other stuff going on that I got way behind on getting things together here at home. It looks as though we are taking baby steps but getting there. Another thing to do is see if I can still find tomato, peppers, and eggplant for my pots. We’re a bit late on them too.
Dinner was grilled lemon & herb infused boneless chicken breasts served with veggies and a large salad with NY cheesecake for dessert. The Curmudgeon enjoyed it. Does anyone have any special grilling recipes they’d like to share?

And how was your holiday?

Yesterday would’ve been my father’s 97th birthday if he were still with us. I love you Dad and miss you every day!
I made us a lovely dinner of leg of lamb, pickled beets and eggs, potato salad, and one deviled egg for both of us. The Curmudgeon was in heaven over it. It had to be one of his absolute favorite meals. In fact, each component is a favorite of his so he was quite over the moon. The deviled egg I served him made him giggle.
Gavin and Patty sure enjoyed the tidbits of lamb he provided for them.

It wasn’t a low cholesterol dinner…

Every once in a while I do have to make The Curmudgeon something special for dinner. I knew I wasn’t going to have time to get fancy last night because I had a dentist appointment in the afternoon.
My solution at 4:30 in the morning, was to slice some onions, toss them in the crock pot, put the frozen chuck roast on top of them, season it and pour a bottle of Guinness Stout over all. I set the pot on low and went to bed.
Right before I left for my 2:00 appointment, I dumped some baby carrots in the pot. The roast smelled marvelous.
Arriving home a little before four, I checked the roast. The carrots were almost done–we’d eat at five.
A quarter to five, I made mashed potatoes, pulled out the carrots and roast, and made gravy. The Curmudgeon enjoyed his dinner. I did too because this sort of meal is becoming scarce in this house.
I’ll make up for it during the rest of the week.

Bingle Jell diet ditty

Holiday treats delivered here have made my hips and boobs bigger dear.
Cookies here, candy there, someone help me to my chair.
My goose is cooked. I don’t mean for food. Heart healthy please I’m not kidding you.

Honey Chipotle Pecans

Honey Chipotle Pecans
This recipe doubles easily.
2 tbsp honey
1 1/2 tsp chipotle powder
3/4 tsp cinnamon
2 cups pecans
2 tbsp sugar
3/4 tsp salt
Preheat oven to 350.
In a medium skillet, combine honey, chipotle powder and cinnamon over medium heat until melted and combined. Stir in nuts. Transfer to a baking sheet lined with parchment paper and bake for 10-15 minutes, or until fragrant. Cool slightly (1-2 minutes). Combine sugar and salt in a bowl, add pecans and toss until coated. Spread out on a piece of parchment paper and cool completely. Be warned that if you have one…you will have another. Store in an airtight container.

Heart healthy diet wins

I figured I’d start with some of the heart healthy diet meals that were real winners. The American Heart Association Meals in Minutes cook book had some great recipes.
The best recipe from that book so far is the Parmesan Pork Medallions. The Curmudgeon and I loved it! I gave some left overs to G and she and her husband loved them too. Most of the recipes I’ve tried from that book have gone over well. The No Chop Stew is excellent too and very easy to make.
The recipes in the Cardiac Recovery book were not as successful in the house. The Curmudgeon did enjoy some of the recipes like the BBQed Chicken Spicy Southern Style and the Jamaican Jerk Chicken. He did not care for many of the soups and beef recipes.
I’m still testing recipes and modifying old stand bys, it isn’t easy now with our beef heavy freezer. The new shipment of meats will help a lot since I ordered less beef and much more poultry and fish.

Changes in our diet

Big changes are coming. Today I put my meat order in with a company we’ve dealt with for several years. I think we will surprise our service. I’ve made some big changes in what we’ll order.
We do this every six months. Then they come in and load our freezer and I don’t need to buy meats at the grocery store.
We won’t be ordering anywhere near the red meats that we have in the past. Although The Curmudgeon doesn’t like fish or turkey, we’ll have some on the list. I’ll eat it and he can has a cheezeburger.
I’m looking forward to the changes.

Thank goodness the cooler weather is coming

Now I can add soups and stews to our menu. I love to make them from scratch. It is easy to make them in a heart healthy manner too. Which is something I am trying to do with everything these days.
It’s also one way to get DH to eat less meat and more vegetables without complaining.
Over the next week or so I’ll be digging through my recipes and pulling out all my favorite soup and stews. I do have a few out and have some of the fresh ingredients on my list for the farmers market.
Don’t get me wrong, I do not like cold weather. However, I don’t mind cool weather. (We can only hope it is dry.)

I’m enjoying my new grill pan

I recently bought a Le Creuset Bistro Round Grill pan. I love it.
I can’t believe how often I’m using the grill pan. Each new thing I’ve made on it has turned out tastier than if I cooked it in the fry pan or under the broiler. DH is loving the results too.
It is a heavy pan, so anyone who has trouble lifting heavy pans would probably be better off buying something on the lighter side.
Now that I’m used to the pan and know the best heat setting on my stove top for it, I am pan grilling most of our meats. My less fat, healthier meals for us are working well so far.

Treating myself to the good stuff

I do love that we have a farmers market nearby. I wish it was open more than three days a week though.
This week I bought chicken sausages for me–DH doesn’t like them. I bought four varieties jalapeno and apricot, wild mushrooms and asagio cheese, lemon-wine-garlic and parsely, and artichoke a calamatra olive. I’ll have the chicken sausage when he has his pork sausages.
Another treat I found at the market were fresh figs. I behaved myself and didn’t even look at any of the bakery stands.
I’ve already begun to write up my list for my next trip.

Another day…

I finally went grocery shopping. Wow, I had no idea that I’d get so darned tired. It was wonderful to have the bagger follow me out to the van and load the bags for me. I was very tired.
I felt as though I’d walked miles by the time I arrived home. Then I had to unload my van. I was fortunate to find no cars parked in front of the house so I could pull my van’s rear door even with the front door. Yay, that saved me quite a few steps.
DH arrived downstairs in time to carry in the two heaviest bags for me. It seemed to take forever to put things away.
Then for dinner I got to try out my new Le Creuset Bistro grill pan that was delivered right before I went shopping. I L O V E it!
I made a lovely Sockeye salmon fillet for my dinner and DH had a hamburger steak–he doesn’t like fish. The grill pan was a treat to use and very easy to clean up afterwards.
