Pumpkin Whoopie Pies with Cream Cheese Filling

Yesterday G brought over samples.  I’d given her a recipe I saw on Facebook and she tried it out.  Can you say delicious?  They are so yummy!!!  They are a delightful taste sensation!

The Curmudgeon tried to eat one late last night and had two drooling dogs to contend with.  They sure did want to share with him.

Pumpkin Whoopie Pies with Cream Cheese Filling
Makes 12-14

3 cups All Purpose Flour
1 Tablespoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground ginger
½ teaspoon salt
½ teaspoon ground nutmeg
¼ teaspoon ground cloves

1 cup brown sugar
1 cup sugar
1 cup vegetable oil
1 – 15 oz. can of pumpkin
2 large eggs
1 teaspoon vanilla extract

Preheat oven to 350 degrees.
Beat together brown sugar, sugar, oil and pumpkin. Add eggs one at time, mixing well after each addition, followed by the vanilla. In a separate bowl, sift together the dry ingredients. Slowly incorporate the dry ingredients into the wet until just combined.
Using a pastry bag with a round tip, or a big zip top plastic bag with one corner snipped, squeeze out concentric circles of batter, starting from the middle and working outward until the circles are about 2 inches in diameter. Bake for 11 minutes and cool on a rack.

Cream Cheese Filling
1 – 8 oz. package of cream cheese, softened
1 stick of unsalted butter, room temperature
1 – 16 oz. package of powdered sugar
about a  cap full of vanilla extract
a pinch of cinnamon (to taste)

Beat together cream cheese and butter. Add powdered sugar, vanilla and cinnamon. Frost flat side of half the pies and top with another piece.

Enjoy right away or chill overnight.

 

Mid-week updates

     So The Curmudgeon decided to skip his Avonex shot Monday night since he had so many bad days last week.  So far this week, he hasn’t been nearly as bad off as he was any day last week.

     Both of the pups were itchy last week. I went over them with the flea comb.  They each had two fleas on them.  Damn it, we haven’t had fleas here in almost twenty years.  So far since then, I’ve gone over them daily, found three more, have vacuumed the house like a maniac, and we are now two days clear of them.

     The Curmudgeon mowed the lawn.  Took him two days but he did it. 

     My tomato plants are done, pulled from the pots, and the green tomatoes are inside ready for me to fry them in the next day or two.  It looks as though I may get two more eggplants before the frost kills the plants.

     Next project is to figure out how I’ll get the house painted.  Do I wait until they do the bathroom?  I think so, I’d hate to have them damage a new paint job getting the old bath tub out of here. 

     I can always get to work on the much-needed, much neglected caulking on the back porch. 

     Then there are those voodoo dolls I need to make for our Halloween porch decorations.  Anyone ready to volunteer to lie down on my tracing paper so I can draw my life-sized patterns?  😀  I have coffee.

Yes, the insanity has begun at my house

     If it were up to me, I’d leave my Halloween decorations up all year round.  Oh.  Wait.  I already do.  😀

     My animatronic caged crow arrived today.  He’s cute. I hope I manage to drive The Curmudgeon over the edge by Halloween.  😉

     I found and ordered a 4 CD Halloween music mix.  It has everything but one song I wanted on my mix.  Wicked good!

     I have my tracing paper now so I can get to work on my giant life-sized voodoo dolls.  I’ll have to trace and cut the figures out of the burlap out in the driveway.  Hehehe!  I do love freaking out my neighbors.

Lost in the house somewhere…

 

HPIM1796     Last Halloween I couldn’t find this prop.  It seems I put it away the year before somewhere safe.  Now you all know how that goes…

We’re having it for dinner again?

     If The Curmudgeon wouldn’t shoot me I’d have lasagna for dinner again tonight.  We had it last night and it tasted even better than the lasagna we had the night before. 

      It’s not just how good it tastes, it’s how easy it is for me to heat and what few dishes I have to do afterwards.  Yep, I am lazy.

     Anyone who wants cupcakes had better get over here.  I have a dozen left and they are tasty.  I do NOT need to eat a dozen cupcakes!

A very successful Trick or Treat night

     G and I knew we’ve had hordes of kids come trick or treating every year.  This year I decided I’d be clever and figure out how many we get in a night.  I bought three hundred glow stick bracelets to hand out with the candy.  The idea was one per child.  Well, by eight o’clock, we’d handed out all 300 and had some disappointed kids who only got candy.  Therefore, the count is ‘over 300.’

     They were coming at us so fast that G had to take over handing out stuff alone while I went crazy snapping and putting together bracelets.  No pictures this year, we didn’t have a chance in hell of taking any.  LOL!  The way the kids went for them we could have had no candy at all and no one would have complained.

     Good idea for next year.

It’s Trick or Treat nite here!

  Decorations up?  Almost done.  Vampire teeth, skulls, and bones ice cubes made?  Check.  Candy?  Check.  Lasagna ready?  Check.  Fancy Halloween cupcakes ready to go?  Check.  Wine and drinks ready?  Check.

Well then, LET’S PARTY!!!!

     My cardiologist appointment yesterday went very well and I can stop another medication now.  I don’t go back to see him for another six months.

     Afterwards, I had entirely too much fun.   Annie and I went out for the day.  We drove about looking at Halloween decorations on houses, then we went to several stores.  Bad that Halloween stuff is on sale everywhere.  Good that Halloween stuff is on sale everywhere.

     Yes, I bought a lot of stuff.  I finally bought a huge cauldron, I’d eyed those up for years.  I found a light up scary pumpkin that I may turn into a great large prop later.  12 Ft. of fake chain managed to follow me home.  A bouquet of black roses, 6 goth hair clips to keep my hair out of my eyes, two bags of mini bones for use with the Voodoo dolls next year, a black leather spike and skull wrist band, spooky skull earrings, a skull and fang bracelet, 3 Sparky T-shirts (one for The Curmudgeon), and a pair of PJs that have bull terriers and other dogs on them.  Whew!

     Then we stopped for a an appetizer, water, and a drink.  We won’t go into that.  Suffice it to say, I had them take my drink off the bill, it was that bad.  Okay, we weren’t spending a fortune on food but we still deserved service as well as any other customer.  Our food, a simple appetizer, took forever and our drinks took even longer to get to the table.

     A little window shopping after that and we were ready to head home.

One day, I will no longer carve pumpkins…

 

Okay, so I bought a Funkin the other day.  Now I’m going to carve it in my favorite Frankenstein monster pumpkin carving.  Eventually I plan to carve all of my favorite pumpkins over the years into Funkins so I will no longer have to carve real pumpkins.

I’m finding that the older I get the more my hands pain me when I do those intricate carvings.  However, I refuse to disappoint all those kids who come up our street just to see the pumpkins every year.  Heck some of the kids are grand-kids of kids who came to see the first pumpkins we put out each year.

 

Getting geared up for our Halloween party…

     Yes, I know it’s early but yesterday G and I decided what to make for Dominique’s birthday cake  at our Trick or Treat night party.  Then, we had to make sure we had the supplies on hand since last time many of the Halloween cake decorating items were out of stock when we went looking for them.

     I went on Amazon and ordered everything we need to make….. MINIONS!!!!

Shopping therapy

     Two weeks of being shut in with The Curmudgeon had me desperate to go for a walk yesterday.  Imagine how completely ticked off I was when my van wouldn’t start.  I called Annie and begged her to come get me.

     “I NEED to get out of the house!”

      She came and got me.  Instead of going for a walk because the heat and humidity were up again, we went for some shopping therapy.  I found the furniture I want for my living room.  The perfect couch, a lounge chair for The Curmudgeon, and a chair and 1/2 with ottoman for me.  I’m taking him in on Wednesday so he can see them.

     We also went to Micheal’s and were tickled to find they are getting the Halloween stuff out.  Yeah, I bought a few things.
